A classic Italian dish of crispy pan-fried chicken breast with a fresh lemon sauce. Ideal for a quick dinner.
Bring a large pot of salted water to a boil and cook the spaghetti al dente according to the package instructions. Drain and set aside.
Put the flour on a plate. Beat the eggs in a bowl. Mix the breadcrumbs with the parmesan on another plate.
Lightly flatten the chicken breasts with a meat mallet, then season with salt and pepper. Coat first in flour, then dip in the eggs and finally coat in the parmesan breadcrumb mixture.
Heat 2 tbsp olive oil and the butter in a large pan. Fry the chicken over medium heat until golden brown on both sides, about 4-5 minutes per side. Remove and keep warm.
Add the remaining olive oil to the pan and fry the garlic until fragrant. Add the lemon slices and heat briefly.
Return the chicken to the pan, sprinkle with parsley and serve together with the lemon garlic mixture.
Divide the spaghetti between two plates and serve with the chicken piccata Milanese.
💡 Make sure the pan is hot enough before adding the chicken for an extra crispy crust.
