Yesterday's pasta + 3 eggs + whatever else is lying around = a real breakfast.

Ingredients

  • 200g cooked spaghetti
  • 3 eggs
  • 2 tbsp olive oil
  • 1 bell pepper, diced
  • 100g cherry tomatoes, halved
  • 3 garlic cloves, finely chopped
  • 1 onion, finely chopped
  • 50g grated parmesan
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp freshly chopped parsley

Instructions

1

Heat the olive oil in a large ovenproof pan over medium heat.

2

Add the onion, garlic and bell pepper pieces and fry everything for about 3-4 minutes until the vegetables are soft.

3

Add the cooked spaghetti and halved cherry tomatoes to the pan and mix well.

4

Whisk the eggs in a bowl, season with salt and pepper and pour over the spaghetti mixture.

5

Sprinkle with the grated parmesan and let the frittata set over low heat for about 5 minutes.

6

Set the oven to the grill function and gratinate the frittata in it for 2-3 minutes until golden brown.

7

Sprinkle with chopped parsley and serve immediately.

💡 Depending on taste, the frittata can also be varied with other cheeses such as feta or mozzarella.
